- Prepare 425 grams lemonade concentrate see opposite for my recipe
- Take 3 egg whites
- Get 1 tsp lemon zest
- Get 2 tbsp liquid glucose
- Use 15 grams chocolate drops
- Provide lemon food colouring (optional)

- Add lemon zest to lemonade concentrate in a pan & boil rapidly for about 5 minutes until syrupy then leave to cool
- Using an electric whisk, whisk egg whites until slightly stiff & frothy, then stir in lemonade concenrate, liquid glucose & colouring
- Cover the jug then pop in fridge for about 30 minutes to chill.
- Turn on ice cream machine paddles turning pour mixture in and wait 50 minutes until right consistany.
