- Prepare 2 slices white bread with crusts removed
- Prepare 1 1/2 tbsp tomato pesto
- Use 2 tbsp melted garlic and herb butter
- Prepare 2 Large Eggs
- Use 1/4 cup milk
- You need 1 1/2 tsp basil pesto
- Use 1 1/2 tsp wholegrain dijon mustard
- Use salt
- Use freshly ground pepper
- Get 2 roma tomatoes sliced

- Grease baking dish with non stick baking spray or some butter.

- Pour egg mixture over bread.

- Bake at 220°C until set. Approximately 15 minutes.
- Remove from oven and top with grated cheese and a sprinkle of paprika. Grill in oven until cheese is melted.
- Serve with side of bacon and sauteed mushrooms.
